Homemade Fish Balls

Fish balls are a street food staple in the Philippines. Every Filipino can attest that these little devils are highly addicting! However, when you’re thousands of miles away from your home country and you’ve got a sudden hanker for comfort food, you just gotta make your own version and just be done with it.

Homemade Fish Balls
Yield: 4 servings
Prep time: 35 minutes
Cook time: 20 minutes

Ingredients:
For the fish balls:
1/2 pound tilapia fillet, coarsely chopped
1 teaspoon baking powder
1 teaspoon salt
1 tablespoon cornstarch
vegetable oil, for frying

For the sauce:
1 cup water
1 tablespoon cornstarch
1 tablespoon all-purpose flour
1/4 cup firmly packed brown sugar
3 tablespoon light soy sauce
1/2 teaspoon pepper

Directions:
For the fish balls:
1. In a food processor, combine fish, baking powder, salt, and cornstarch. Process until smooth.
2. Scoop a teaspoon and form into a ball.
3. In a large stock pot, boil 4 cups of water. Drop the fish balls to cook. As soon as they float, scoop them out with a slotted spoon and transfer onto a paper towel-lined plate.
4. Heat 3 to 4 inches of vegetable oil in a large, heavy-bottomed pot set over medium-high heat until it reaches 375ºF.
5. Fry the fish balls until golden brown.


For the sauce:
In a saucepan, dissolve cornstarch, flour, sugar, soy sauce, and pepper in water. Cook in medium-low heat, stirring frequently, until it thickens.
