Homemade Butterbeer

Harry Potter is turning 33yo this month. I know because I’m a fanatic! Ok fine, I googled. That’s not a crime. Is it?!

Anyway, this entire month is going to be all about HP. Just because I really am a fan.

Why not we kick-start the celebration with a wizardly concoction, shall we? Magic or no magic, this is one wicked drinking potion even us, muggles, will surely enjoy.


Homemade Butterbeer
Yield: 2 servings
Prep time: 5 minutes
Cook time: 10 minutes

1/2 cup firmly packed brown sugar
1 tablespoon water
3 tablespoons unsalted butter
1/4 teaspoon salt
1/4 teaspoon cider vinegar
1/4 cup plus 2 tbsp heavy cream, divided
16 ounces cream soda

1. In a small saucepan over medium heat, combine the brown sugar and water. Bring to a gentle boil and cook, stirring often, until the mixture reads 240ºF on a candy thermometer.
2. Stir in the butter, salt, vinegar, and 2 tablespoons of heavy cream. Set aside to cool to room temperature.
3. In a medium bowl, combine 1 tablespoon of the brown sugar mixture and the remaining 1/4 cup of heavy cream. Use an electric mixer to beat just until thickened, but not completely whipped.
4. To serve, equally divide the brown sugar mixture between 2 glasses. Add 1/4 cup of cream soda to each glass, then stir to combine. Fill each glass nearly to the top with additional cream soda, then dollop with the whipped topping.
