Chicken Satay

When you get tired of eating chicken with a knife and fork, skewer then grill them. I always find it fun to eat anything skewered.

Chicken Satay
Yield: 4 servings
Prep time: 10 minutes
Cook time: 30 minutes

1 pound boneless, skinless chicken thigh fillets, cut into 1-inch cubes
1 1/2 tablespoons granulated sugar
1 teaspoon ground ginger
1/2 teaspoon chili powder
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon kosher salt
juice of one lemon or lime
3 tablespoons honey

1. Fire up the grill.
2. In a bowl, combine all the ingredients together, working the seasonings into the meat with your hands.
3. Thread the chicken cubes into bamboo skewers, four to five pieces per stick. Lay in a single layer in a tray or platter and leave to continue to marinate until the grill is ready.
4. Grill for about five minutes per side. Serve immediately with peanut dipping sauce, recipe here.
