Yield: 4 servings

Cook time: 12 minutes
1 pound chicken tenderloins, cubed to 1-inch chunks
1 cup panko breadcrumbs
1 cup all-purpose flour
1/2 tablespoon salt
1/2 tablespoon granulated sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried parsley
1/2 tablespoon smoked paprika
1/4 teaspoon ground pepper
1 tablespoon vegetable oil
1. Preheat the oven to 350ºF. Line a baking sheet with foil. Insert a cooling rack that fits inside the baking sheet. Set aside.
2. In a food processor, combine breadcrumbs, flour, salt, sugar, garlic powder, onion powder, dried parsley, smoked paprika, and ground pepper. Pulse five times. Turn on the food processor and pour the oil. Mix for five seconds and stop.
3. Transfer the breading to a large ziploc bag. Add the chunks of chicken. Seal the bag and shake until all the chicken is well coated.
4. Bake for 12 minutes, or until the chicken is cooked through. Serve with choice of dipping sauce.
