Apple Cheesecake Crumb Pie

The title may sound like a mouthful, but trust me, it’s worth every syllable the moment you take your first bite.

Apple Cheesecake Crumb Pie
Yield: one 8-inch pie
Prep time: 50 minutes (includes resting)
Cook time: 50 minutes

Ingredients:
For the crust:
1/4 cup unsalted butter, softened
2 ounces neufchatel cheese, softened
3/4 cups all-purpose flour


For the crumb topping:
1/2 cup all-purpose flour
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1/4 teaspoon ground ginger
4 tablespoons cold unsalted butter, diced


For the filling:
2 cups apples, peeled and diced into 1-inch cubes
1/2 teaspoon ground cinnamon
2 teaspoons all-purpose flour
1/4 teaspoon salt
12 ounces neufchatel cheese, softened
1 teaspoon vanilla
2 large eggs, room temperature
1/3 cup granulated sugar
1 tablespoon cornstarch
Caramel sauce, for serving

Directions:
1. In a large bowl, mix the softened butter and neufchatel cheese until fully combined. Stir in the flour until a dough forms. Wrap the dough securely with plastic wrap and refrigerate for 30 minutes.
2. Make the crumb topping: combine all ingredients except butter in a small bowl. Add the butter and rub it in until well incorporated. Set aside.
3. Add the apples to a medium bowl and toss with the cinnamon, flour, and salt. Set aside. In another bowl, beat together the cream cheese, vanilla, eggs, sugar, and cornstarch. Set aside while you prepare the pie crust.
4. Preheat the oven to 375ºF.
5. On a flat and lightly floured surface, roll out the dough to about a 10-inch diameter. Gently lift up and place in ungreased 8-inch glass pie plate. Press firmly against side and bottom. Transfer the pie plate to a baking sheet and bake in the oven for 10 minutes.
6. Remove from the oven. If the crust has puffed up, gently push it back down before pouring the cream cheese mixture on top. Add the diced apples on top, followed by the crumb topping. Bake for 50 minutes. If the crumbs aren’t brown enough, broil for a few minutes.
7. Cool on cooling rack. Enjoy warm with a drizzle of caramel sauce.
